WORKSHOP DESCRIPTION

If you love the world of fermentation, travel to Taiwan with this course and learn how to prepare Pao Tsai (泡菜), the refreshing and probiotic snacks based on pickled or fermented vegetables used to combat the heat, all with vegetables, seasonal fruits and a touch of Maldon Salt.

MELLOW SHENG

Jenny Chih-Chieh is the creator of Mellow Sheng, a gastronomy and culture platform with an emphasis on natural food making processes, oriental tea culture and Chinese calligraphy. A project that promotes the Living culture philosophy.

SALT SPECIAL

In this edition, the emblematic brand Sal Maldon will once again act as the main thread of the workshops, through which the versatility of salt in different areas of gastronomy will be demonstrated.
