EXPERIENCE DESCRIPTION

An immersion into one of the most versatile, flavourful and irresistible ferments in the kitchen. In this workshop, you will discover everything behind miso and how just three ingredients — legumes, koji and salt — can create completely different flavours.

You will learn to play with proportions, time and ingredients to create misos with their own character, taste different preparations and discover their full potential in the kitchen, while also learning more about the benefits and distinctive qualities of fermented foods.

We will make a comforting miso soup, and you will take home a recipe booklet and your own jar of miso to let it ferment at home and observe its evolution over time.

SANTS FERMENTS

Sants Ferments is a project born from a passion for fermentation and a desire to share its benefits with the community. They make artisan vegetable ferments such as kimchi, sauerkraut and miso, as well as kombucha, always fresh and unpasteurised.

Committed to quality and sustainability, they work with fresh, locally sourced ingredients, placing care for both the product and the process at the heart of what they do.

WHAT WILL YOU GET FROM THIS EXPERIENCE?

You will learn what miso is, how legumes, koji and salt work together, and how changing their proportions can produce different results. You will make your own miso with local legumes and leave with the key knowledge to guide its fermentation at home.
