Debate: The Importance of Our Decisions in Consumption.
An essential gathering where we will reflect on how our food choices impact sustainability, gastronomy, and the local economy. Renowned voices from the gastronomic sector will participate: Rafa Peña from Gresca, Alexis Peñalver from La Pubilla, Carla Gili from Olis Anècdota, Daniele Rossi from Slow Food and Rasoterra, and François de Halleux from Origo. They will all share their experience and vision to inspire more conscious and responsible consumption.

PROJECT DESCRIPTION

Rafa Peña (Gresca): Chef, co-founder of Gresca and a leading figure in Barcelona’s gastronomy scene, known for his creative and locally focused approach to cooking.

Alexis Peñalver (La Pubilla and Hermós): Chef and founder of the restaurant La Pubilla, which has been promoting local and seasonal products through traditional Catalan recipes for over 10 years.

Carla Gili (Olis Anècdota): Artisan producer of extra virgin olive oil who combines sensory knowledge and sustainability in the production and promotion of her oils.

Daniele Rossi (Slow Food and Rasoterra): Activist and chef, co-founder of the Slow Food movement in Barcelona, ​​focused on spreading sustainable and fair food and co-founder of the Rasoterra restaurant.

François de Halleux (Origo): Founder of Origo, a bakery that uses organic flours and slow sourdough fermentation processes, and also offers a curated selection of products from local artisans.
