WORKSHOP DESCRIPTION

You will learn how to make homemade ice cream, and the ice cream shop will teach you the basic principles of ice cream formulation. You will discover how to make a white base from scratch live, churning the base and tasting the result, which is sure to be delicious!

You will see a brief introduction to nut-based and fresh fruit bases, and finally, you will also learn the organoleptic differences between different types of milk by tasting freshly milked, pasture-raised goat milk from Guadarrama, pasteurized at low temperatures.

CAMPO A TRAVÉS - NOMAD MICROCREAMERY

At their nomadic ice cream shop, Campo A Través, they are committed to a philosophy that values transhumance, that ancient movement of herds in search of the best pastures. This process not only inspires their name but also their way of working. They produce ice cream and other dairy products in small batches using locally sourced, pasture-fed goat's milk, ensuring that each product reflects their dedication and love for fresh, natural ingredients.

The quality of the milk they use is essential, and sustainability is the cornerstone of their project. They work directly with small producers, always valuing their work and paying them a fair price. By purchasing raw materials directly from the producer, Capo A Través avoid intermediaries like large retailers, allowing them to acquire them at a good price while also ensuring that these producers are paid fairly.
