EXPERIENCE DESCRIPTION
A three-session series where you will learn the craft of artisan bread making, exploring various types of doughs, flours, and preparations.
We begin with the fundamentals: sourdough. Here, we lay the groundwork, covering timing, fermentation, and the specific techniques, from kneading to baking, that shape the final character of each loaf.
In the second session, we focus on grains and whole-grain breads. Spelt and rye take center stage, requiring a different touch and pace. Each flour has its own personality, and you will learn to interpret it: understanding how flavor, texture, and handling techniques shift based on the flour's unique properties.
The third session takes a sweet turn. We’ll make anise ‘roscón’ and sweet almond ciabatta, showcasing the intersection of artisan bread and pastry, and demonstrating the incredible potential of a well-crafted dough.
By the end of the course, you will have gained a new perspective on flours and doughs, learning to read them and navigate the diverse styles within this single craft.
BONSFOCS
BonsFocs is the project of Mónica, a baker, teacher and passionate advocate of artisan bread. She grew up in the mountains, surrounded by her family's vegetable garden and the slower rhythms of country life — an outlook that still shapes the way she makes bread today.
For the past 19 years, she has been baking bread, recovering traditions and working with deep respect for ingredients and their natural timing. For her, breadmaking is about connecting with the process, enjoying the wait and bringing a little of the calm of country life into the city.
WHAT WILL YOU GET FROM THIS EXPERIENCE?
A comprehensive journey through the craft of artisan bread-making in three stages: you will master the fundamentals of sourdough, work with whole-grain spelt and rye flours, and learn to make sweet doughs.
You will learn to evaluate flour, understand the dough, and adapt your technique to achieve your desired results. You will take home the bread from each session, made with your own hands.
