Then, we’ll turn the dough into an irresistible dish, topped with Swiss Le Gruyère AOP—the gourmet touch that enhances simplicity with authentic flavour.

PROJECT DESCRIPTION

Davide Spada is an Italian pastaio master based in Barcelona, known for his dedication to the artisanal production of high-quality fresh pasta. After training in Genoa, a city with a centuries-old pasta-making tradition, Spada founded Pasta Spada, a family-run workshop that combines traditional Italian techniques with an unwavering passion for gastronomy.

His workshop, located in Barcelona, produces fresh pasta daily without preservatives or additives, using only the finest ingredients. This attention to detail and the constant pursuit of excellent raw materials have made Pasta Spada a benchmark for many prestigious Italian restaurants in the city. Spada himself is a devoted advocate of fresh pasta, eating it daily and considering it essential for a healthy diet.
