WORKSHOP DESCRIPTION
Dive into Catalan cooking through two emblematic dishes of Girona's gastronomy. We will prepare Josep Mercader’s salad while discovering the legacy of this pioneer of modern Catalan cuisine and the pivotal role of Motel Empordà in the country’s gastronomic history.
Afterward, we will prepare the traditional Olot's potatoes (patates d'Olot), working with different fillings and frying them using artisanal methods. Throughout the process, we will learn basic techniques, the origins of these dishes, and the importance of their ingredients. This is an experience designed to cook, understand, and, of course, taste everything we have prepared.
COMPANY DESCRIPTION
La Referència is a platform for gastronomic outreach and design applied to the kitchen, uniting Catalan cuisine, local territory, and visual culture. Behind the project are Cesc Alonso, trained at the Hofmann School and the BCC (Basque Culinary Center), and Nadia Martin, a designer trained at ERAM. They organize workshops and experiences where taste and aesthetics go hand in hand.
WHAT WILL YOU GAIN FROM THE EXPERIENCE?
You will learn how to prepare, step-by-step, two iconic dishes from Girona: the Josep Mercader salad and the traditional Olot potatoes. You will discover their techniques and gastronomic context in an experience designed to cook, understand, and, of course, taste your own creations at the end of the session.
