WORKSHOP DESCRIPTION
An encounter between Catalonia and Italy through the ritual of bread and tomato—one of the most universal gestures of Mediterranean cuisine. We will prepare romesco and pesto rosso live, comparing techniques and discovering nuances using local, seasonal products.
We will also put pa amb tomàquet and bruschetta into dialogue, understanding bread as a cultural symbol. This is a participatory experience featuring a final tasting, where you can enjoy the product and its historic traditions.
COMPANY DESCRIPTION
La Vestale is a gastronomic project rooted in respect for the product, the territory, and conscious cooking. After years of crafting artisanal vegetable preserves, the project has evolved to focus on culinary education and gastronomic consulting, centering its activities on workshops and supporting projects with a sustainable and Mediterranean perspective.
WHAT WILL YOU GAIN FROM THE EXPERIENCE?
You will learn how to make a mortar-based romesco and a pesto rosso, comparing their techniques, ratios, and textures. You will taste both sauces to analyze their differences and applications, and you will assemble your own version of pa amb tomàquet and bruschetta, experimenting with different finishes.
